We were thrilled to be asked to take part in Fairtrade Fortnight with The Midcounties Co-operative from 27th February – 11th March. We absolutely love the Arniston Bay Fairtrade wine, discovered many years ago following my dad hearing that it gives less of a hangover. So back to Fairtrade Fortnight, two weeks of the year when the The Midcounties Co-operative, among others, raise awareness about the importance of ethical food practices, showing how buying Fairtrade makes a difference to the lives of farmers in developing countries.Fairtrade wine for Chicken with sage, mustard and white wine recipe for fairtrade fortnight

To celebrate the The Midcounties Co-operative created some delicious recipes using fairtrade ingredients… this chicken with sage, mustard and white wine recipe uses Co-op fairtrade wine

Recipe: Chicken with Sage, Mustard and Fairtrade Wine

Ingredients

  • 12 fresh sage leaves
  • 100g butter, softened
  • 4tsp wholegrain mustard
  • Salt and ground black pepper 4 chicken breasts
  • 8 slices prosciutto
  • 1 tsp olive oil
  • 125ml Fairtrade white wine (pick your favourite)
  • 1 garlic clove

Method

1. Begin by preparing a sage butter by finely chopping sage leaves and mixing them with butter and mustard (to your taste).

2. Slice into the side of each chicken breast to form a pocket and stuff with the mixture.

Wrap two prosciutto slices tightly around each one to secure and heat in a frying pan for around two minutes on each side to seal.

3. Preheat the oven to 170°C/340°F/Gas 3, place the prosciutto-wrapped chicken onto a tray and cook for 20 minutes.

Remove the chicken from the oven and rest for ten minutes.

In the meantime, pour the cooking juices from the baking tray and into a saucepan and mix with the wine and crushed garlic clove, cooking for a few minutes to reduce.

4. Finally, slice each chicken breast into five strips and pour the sauce on top.

Serve with a side of your choice – the Co-op recommend mashed potato and vegetables. We had brown rice, carrots and broccoli.

I chose this recipe as I’m always on the look out for easy to cook recipes for dinner. I should change that to easy to cook nice recipes, creating foods like we’d order in restaurants or get in a supermarket dinner from £10. Crafting such dishes from scratch is just so satisfying, and it smelled so delicious making up the sauce to stuff in the chicken breasts and of course sipping a glass of wine as I cooked.

I’m looking forward to using this recipe as a basis for other dishes. Using mustard was particularly eye-opening as I’ve never used it before and it was so delicious. You probably think I’ve been living under a rock never using mustard, but it’s just been something I’d put on burgers or in hot dogs, with the occasional shop bought mustardy chicken sauce.
