It’s Easter which means, I need to bake a cake! This year I did a simple Easter chick cake, perfect for a 15 month old toddler who loves ducks, and has just discovered birds. She thought this was a bird, which surprised us!

1. Make a sponge cake

I’ve used my fail-safe recipe: 3 eggs, 175g self-raising flour, 175g caster sugar, 150g butter, teaspoon baking powder. Mix it all up…

Bake for around 40 minutes at 170C. (I used some of my mixture to also make a few cupcakes)

2. Make a template

Here is mine…. As you can see the wings are wider than the cake, but you could easily make it so the wings are inside your circle. I probably would next time, as I think his wings are a bit long.

First draw round the cake tin:

Then figure out your template…

3. Place the template over the cake and use a sharp knife to cut the shape.

4. Add any bits of cake you’ve removed to make the wings match the template

5. Smear melted jam over your cake so the icing will stick.

6. Yellow icing

I used some icing sugar, kneeded the yellow icing and then got rolling.

I made my icing quite a bit bigger to make sure I could get around the wings with lots to spare and shape into the creases with icing to spare.

Place the icing over the cake and smooth it out into all the creases.

Trim around the cake, keeping a little bit of edging so the cake doesn’t show.

7. Orange beak

I used a bit of red food colouring to make the yellow icing orange. Rolled it into a ball to get the colouring thoroughly mixed and then rolled it out.
Cut a triangle for the beak. I aired on caution and cut it a bit big to start, then trimmed down once I tried it in place.
But if you do make it a bit small or are not happy, just roll it and recut. Easy! This is why I love baking, most of it can just be rolled in a ball, rolled out and recut!

8. Eyes

I didn’t buy any white icing, just used icing sugar and water. I made it quite thick, then rolled it out in icing sugar. I then split it in two, rolled each in a ball and flattened them. Easy eyes! Just like with playdoh or plasticine…. Or blu-tac!
9. Pupils

I used Dr Ortak’s black gel dye to draw two black blobs for the pupils.

10. Clean up the plate/tray. Job done: one Easter chick cake!

    Aaah, this is really sweet! I do a lot of baking with my eldest toddler, when the little one (a tornado assassin,) is sleeping! I’m always looking for new recipes and ideas, and I’m sure he’d love doing this, especially as he’s getting the dexterity for more complex decorating now!
